the "ladies who lunch" lunch

This is a lunch, so easy, yet compliment inducing, that I have decided that this is what I'll serve when I have those semi-awkward "Mums from school" get togethers.  You know the ones....You know them from the car line or standing outside your child's classroom.  Soon you start meeting for coffee after school drop off and one day you find yourself saying "Oh, you must come over for lunch!"....then immediately think "What on earth am I going to serve them?". 

You want to make an effort, without making your guest(s) feel uncomfortable that you've gone to too much trouble.  The goal being, by the time they leave your home they feel well fed, well watered and well known.  You've been able to focus on connecting with that person, rather than worrying about whether or not the food was up to scratch.

Essentially, it's a chicken coleslaw....but oh so much more....

Before you worry about your arteries seizing up just by looking at this....I can assure you that this is Boombah friendly.  You aren't having any refined carbs with this meal so it's all going to be okay.

First you take the slivered almonds and saute them in butter until they're golden.  You really need to watch them carefully, as they're easy to burn.


Shred lettuce and cabbage and shallots (scallions) into your fancy schmancy salad bowl.


scatter the buttery almonds over the top....they might still be a little warm, it doesn't matter.

So purty...

Easiest thing to do is to buy a BBQ chicken and shred it....or if you're feeling particularly industrious, you might already have a cooked one at home.  Whatever.  Go with the flow.



The dressing.  Because of Operation Boombah and Lucy's epilepsy diet, we use artificial sweetener in the dressing.  You might prefer to substitute with honey.  I've made both and they're equally delicious.


Whip it,  whip it good.


It's imperative at this point that as the cook in charge, you have a good tasting of this.....just to make sure it really is as divine as it looks.  It's your duty.  Anything less would be irresponsible.

Splodge over the dressing willy-nilly. 
That is the most technical instruction I can think of. 
Oh look, I've ended a sentence with a preposition....can you still trust me?


Once you've mixed all the dressing in, it all comes together and looks okay again.  Phew.   Social siberia was just a heartbeat away. 

I would serve this for lunch, followed by chocolate dipped strawberries. Yummo. 

Easy peasy preparation with plenty of time left to scrub the vegemite and Weet-bix stains off the floor and walls before my guests arrive.  This recipe's a keeper.



Here's the recipe:

Chicken Slaw with Honey-Mustard Dressing - Serves 2
(the pictures above show this recipe doubled, to serve 4)

1 cup diced cooked chicken
2 cups shredded cabbage and lettuce mix
2 shallots (scallions) including the crisp greens
1/2 teaspoon butter
2 tablespoons slivered almonds
3 tablespoons mayonnaise (try to use whole egg mayo if poss.)
2 teaspoons Dijon mustard
2 teaspoons honey or artificial sweetener
1 teaspoon Balsamic vinegar
